Full disclosure: I'm a long time "vegetarian" upping my plant based game.
I'm swapping out one item at a time (ok probably more than that) in order to do a solid for the greater good.
While I'm not morally opposed to egg eating as an absolute, (it's a topic worthy of more discussion) in short, I am making modifications on my diet.
So, welcome to The Neat Egg...
Neat is pretty freaking neat.
It's a plant-based protein egg substitute.
It's not to mimic the kind of eggs that you'll fry up in a pan for morning breakfast, but the kind of egg that is required when you cook a brownie. Ya dig?
So if you like garbanzo beans and chia and minimal ingredients (there's only two ingredients in the egg substitute mix!) then you're totally going to dig this.
But what REALLy did it for me were the Neat Meat Balls. Hold on to your hats and glasses my veg friends.
One thing I have missed on this meatless journey is a meatball. The meatball is a piece of homemade comfort food that no squash can replace. There's just something about a bowl full of pasta and tomato sauce with a little meaty gem on top that makes the dish so satisfying.
It's been a decade since I've had a meatball. So needless to say, I was doing summersaults as I cooked up - and enjoyed - my first batch. And there will be more to come. There will be more to come...
