I haven’t been the best cook. In fact, as embarrassing as it might be, I haven’t done that much cooking – in my life – at all.
So when I came across the cookbook, Superfoods Everyday, I locked onto it.
Based off the title alone, I knew I was interested. I mean, who doesn’t want to get the most bang for her nutritional buck? The right foods have nutrients, micronutrients, minerals, good fats, and fiber. This is the stuff we should be eating – everyday.
2. Simple ingredients. As I’m just getting started I can only handle a few ingredients and simple steps. A lot of other recipe books have shut me down entirely by overwhelming my newbie skill set
3. Recipes for one. It’s just me and the cat right now. No need to cook for imaginary people.
4. Veggie based recipes!
5. Macro and micronutrient contents listed for each recipe!
Ingredients: I first had to purchase some high quality ingredients. Stopping into Erewhon, my local heathfood store, I made the rounds…
All in all I spent $31.68.
After deducting the one-off saffron costs, as this recipe serves 4, it comes to roughly about $5 a serving. I’m sure that by shopping around and/or purchasing seasonally you could get organic ingredients at a better pricepoint.
The recipe’s pretty simple...
Put it back on the stove to warm it. Then (optionally) add the yogurt and sesame toppings.

My soup turned out more orange/yellow than red/orange. This is likely because I used yellow and red bell peppers instead of just red. I also had a hard time adding the yogurt into a swirl a the top, so I opted to make a flower!
In my version (on the right) you'll also notice black dots. This is due to the charred skins of the tomatoes. It didn't affect the overall taste, which is smokey and had just the right saltiness.
I served it to both my roommate and my boyfriend. They both claim to have loved it!
